Simple Meatless Beans with Vegetables Recipe

If the cook prefers and the items are available, organic ingredients can be used to make this dish. Sea salt can also be used instead of regular table salt.

Ingredients

  • 1 398 ml can of pinto beans (a different type may be used)
  • 2 medium carrots (chopped into ½ inch cubes)
  • 1 small turnip (chopped into ½ inch cubes)
  • 2 small parsnips (chopped into ½ cubes)
  • 1 medium sweet potato (chopped into ½ inch cubes)
  • enough water to just cover all of the ingredients after they have been added to the pot
  • 1 tsp. Herbes de Provence (rosemary, marjoram, thyme, savory, basil, lavender and sage combined)
  • ½ tsp. onion powder
  • ½ tsp. salt
  • ¼ tsp. black pepper

(Note: Other preferred vegetables can be used and they can be chopped finer or coarser as suits personal preference. Likewise, the herds and amount of salt and pepper can be altered to suit the cook’s own individual taste.)

Steps

  1. The carrots, turnip, parsnips and sweet potato are washed, chopped and added to a soup pot.
  2. The can of beans is drained, rinsed and added to the pot with the vegetables and enough water to just cover everything.
  3. The herbs, onion powder, salt and pepper are added to the pot.
  4. The pot full of ingredients is brought to a boil and then simmered on a low heat for about 1 and 1/2 hours. This will allow the ingredients to combine for a delicious flavor. The time can be adjusted depending on how firm or mushy the cook prefers for the vegetables to be.

Slow Cooker Alternative for Meatless Beans and Vegetables

By reducing the water by about an inch, this recipe can also be used in the slow cooker. It can be cooked for about 8 hours on the Low setting or 4 hours on the High setting. This method allows the cook to prepare the dish, and then do other things while it is cooking.

This easy meatless dish is perfect for people who are beginning to embrace vegetarian cooking. It is nutritious, simple, tastes great and can be served to the family as a hearty meal. Adding some bread or rolls makes it complete.
