Meatless Yellow Split Pea Soup with Sourdough Bread - Stella Walsh
A simple yellow split pea soup without meat can be a hearty and satisfying dish on a cold day. With added vegetables it makes a very nutritious meal.

This soup is easy to prepare, making it a perfect meal to get started, and then leave to simmer while doing other chores or activities. At the end of a cold day it is comforting and satisfying. Even people who like to eat meat find it filling and tasty.

Easy Meatless Yellow Split Pea Soup Recipe

Depending on availability and personal preference, organic ingredients can be used to make this soup. Sea salt can also be substituted for the regular table salt.

Ingredients

  • 2 cups yellow split peas (rinsed and drained – green split peas can replace the yellow)
  • 2 medium carrots (chopped into ½ inch cubes)
  • 1 small turnip (chopped into ½ inch cubes)
  • 1 medium parsnip (chopped into ½ cubes)
  • 1 small yellow onion (chopped finely)
  • 7 cups water (8 cups can be used for a thinner soup)
  • 1 tsp. Herbes de Provence (rosemary, marjoram, thyme, savory, basil, lavender and sage combined)
  • ½ tsp. salt
  • ¼ tsp. black pepper

(Note: Other favorite herbs and spices may be used and the salt and pepper can be added to suit the cook’s own individual taste. The vegetables can also be chopped finer or coarser as suits personal preference. The selection of vegetables can also be altered to suit availability or individual taste.)

Steps

  1. The yellow split peas are rinsed and drained and added to a large pot with the water.
  2. The carrots, turnip, parsnip and onion are washed, chopped and added to the water.
  3. The herbs, salt and pepper are added to the pot.
  4. The pot full of ingredients is brought to a boil and then simmered on a low heat for 3 hours. (The mixture may bubble up as it starts to boil. The heat can be reduced to the point where it will simmer but not bubble up.)

Slow Cooker Alternative for Meatless Split Pea Soup

This recipe can also be used in a slow cooker. It is prepared the same way except that the water is reduced to 5 or 6 cups because the liquid does not reduce in the slow cooker. It can be cooked for 8 – 10 hours on the Low setting or 4 – 5 hours on the High setting.

This is also a great way to prepare the soup, and then leave it to cook for the day, while doing other things.

This easy meatless soup is perfect for a cold day. It goes well with some favorite bread or dinner rolls. It is particularly well suited to sourdough bread or crusty French bread.
