Quick and Easy Vegetarian Chili - Stella Walsh
Chili does not need meat to be hearty and warming on a cold day. It can be a quick, easy and nutritious dish for vegetarians or vegans.

This dish is so fast and easy that even people who like meat may choose to prepare it after a long, cold day at work or outside. It is filling, comforting and nutritious for all types of diners, vegetarian or not.

Easy Vegetarian Chili Recipe

Ingredients

  • 1 can of medium vegetarian chili (mild or spicy can be used, depending on preferred taste)
  • 1 can of bean medley
  • 3 cups chopped or diced vegetables (sweet peppers, mushrooms, green onion, or other preferred vegetables)
  • 3 tbsp vegetable oil
  • 1/2 cup water
  • 3 tbsp barbeque sauce

Steps

  1. The can of vegetarian chili is emptied into a large pot and placed over a low heat.
  2. The can of bean medley is drained, rinsed well and added to the large pot. It is mixed with the vegetarian chili.
  3. The chopped vegetables are sautéed in the oil until tender or desired texture is reached.
  4. The chopped vegetables, water and barbeque sauce are added to the large pot and all ingredients are stirred until well combined.
  5. The chili is left to simmer over low heat until it is warmed through. This usually only takes a few minutes. It can be left longer for more combining of flavors.

This meal is good for a cold day. It is quick and easy to put together and goes well with favorite bread, crusty rolls, taco shells or corn chips.

Tips and Alternatives for Easy Vegetarian Chili

There are different things that can be added or left out, depending on the preferences of the cook and diners. It will also depend on how much time the cook feels like spending on preparation.

  • Other vegetables can be used such as corn, zucchini, tomatoes, eggplant or other types of onion.
  • Extra garlic, herbs or other spices can be added for additional flavor.
  • Two or three tablespoons of tomato paste can be added for a stronger tomato taste.
  • The cook can choose a milder or spicier can of vegetarian chili, according to the preference of the diners.
  • The choice of added beans can also be altered to suit individual preference.
  • The amount of liquid can be altered to produce a thicker or thinner chili. The water can also be changed to vegetable broth for added flavor.

Quick and easy vegetarian chili can be a satisfying meal, with bread or rolls, or as a hearty dip for corn chips to accompany that must-see television sports event.

Oh man this looks divine. I love chili,you should consider adding some tvp to it. I am going around trying to find a bunch of vegetarian recipes. I am doing my best to stay vegetarian. The best looking one I found so far is this Roquefort tart, only problem is that it has no pictures.
